The demand for functional starches having a clean label is increasing continously. EPS has outstanding functional properties, such as water binding capacity in cold and warm applications and a good oil binding capacity. Pea starch has a medium-low glycemic index and EPS has a protein content of about 13 %. EPS  can replace other starch types such as potato starch, tapioca, corn and rice in sausages.
